Bluebird Bakery to open third site this month

Artisan baker Al Kippax is to open a third Bluebird Bakery in Leeds’ Kirkgate Market.

The new shop will join the current bakeries in York’s historic Shambles and in Malton.

Specialising in organic bread, Bluebird Bakery uses nothing processed and nothing artificial in their baking.

Kippax stated that all the bread meets the criteria of the Real Bread Campaign. To be a part of that campaign bakers must promise to use local flours, preferably organic – which Bluebird does – and not use any additives.

For example, for the bakery’s sourdough, they only use three ingredients – flour, salt and water. Kippax said that a similar loaf in a supermarket is called sourdough because they put a little sourdough culture in it. The rest of it is a load of chemicals and flour improvers and things like that.

As well as bread, Kippax and his team apply their traditional methods and organic ethics to bake sweet pastries, brownies, sausage rolls, and vegetarian bakes.

Customers can expect chorizo rolls, ham & cheese brioche, cheese, pastrami & red onion Danish, and Earl Grey teacakes, award-winning brownies and salted caramel shortbread.
