Brakes Scotland announces final line up for 2017 Student Chef Challenge

Top student chefs from Scottish colleges are set to cook up a storm as they battle it out to be crowned winners of the Brakes Scotland Student Chef Challenge in front of a panel of esteemed judges at the City of Glasgow College in June.

To enter, college teams had to submit a menu, methodology and a costed list of ingredients. The six teams reached the final via a paper judging round and the panel was led by Kevin MacGillivray, Regional Executive Chef for Macdonald Hotels.

Development Chef for Brakes Scotland, Derek Lockett and the Federation of Chefs Scotland Chairman, Neil Thompson were also on the panel. The theme focused on ‘Scotland’s Food and Drink’ and challenged the teams to use local ingredients to give the judges a real flavour of the country’s quality larder.

As well as innovative ideas on the menu, the judges were looking for provenance, a balance of textures and flavours and the ability to cost a menu.

Teams from South Lanarkshire College, Glasgow City College, Scotland’s Rural College (SRUC) and Fife College will now meet in the live cook-off final.

According to the judges, the standard of entries to the challenge, which is supported by HIT Scotland and the Federation of Chefs Scotland was exciting for its first year as a Scottish competition. Judge Derek Lockett said: “The standard of the students this year has been great and it’s great to see that the industry has some fantastic talent coming through. We’re really looking forward to seeing how they perform against each other in the final.”

The live competition final will take place in the brand new City of Glasgow College in Glasgow City Centre. The final requires the teams to produce a three course signature menu in 1 hour and 45 minutes. The three person teams of full-time catering and hospitality students will be cooking the menus they produced for the paper judging phase and includes the likes of Loch Fyne Scallop Ceviche, Oatmeal dressed Mackerel, Wild Cairngorm Loin of Venison, Heather Hills Honey Parfait and Textures of Scottish Teacake with Strawberry.

The winner of the 2017 Brakes Scotland Student Chef Challenge will receive a once in a lifetime trip to Gran Rapids to represent Scotland sponsored by the Federation of Chefs Scotland as well as three-day work experience at Gleneagles resort and a year’s membership to the Federation of Chefs Scotland. In addition to these unique prizes, the winning students will receive an embroidered chefs jacket, framed certificates and a winners plaque.
