Chef Paul Tamburrini to launch first restaurant at Macdonald Holyrood in Edinburgh

Chef Paul Tamburrini has revealed plans to open his first restaurant at the Macdonald Holyrood hotel in Edinburgh.

The chef, who formally worked as Chef Director at Martin Wishart’s Honours brasserie in Edinburgh is expected to open the 80 cover site called Bistro Deluxe in the Autumn.

The menu will offer French cuisine which has been cooked with local Scottish ingredients.

Tamburrini said, ‘Being part of a hotel environment is second nature to me and I’m very proud to be taking this next step in my career. I’ll be recruiting a team of talented chefs and I’m looking forward to creating a progressive and forward-thinking restaurant.’

Macdonald Hotels & Resorts Deputy Chief Executive, Ruaridh Macdonald said, ‘ It will be a superb dining experience and once established, we have ambitions to build on what will undoubtedly be a successful venture by rolling it out in some of our other hotels across the UK.”
