The five-strong London bar group, Darwin & Wallace has been awarded a three star rating from the Sustainable Restaurant Association (SRA).

The chain, which has sites in Battersea, Clapham, Chelsea, Richmond and Chiswick, secured the converted rating for its commitment to ‘serving great quality food’.

The SRA examines activity across three areas of sustainability; sourcing, society and environment and are rated within 14 key areas.

Darwin & Wallace celebrates local and seasonal food in its menus, as well as practising responsible fish sourcing, reducing food wastage and reducing and recycling where possible.

Darwin & Wallace managing director, Mel Marriott, said, “The SRA ethos struck a chord with me from the inception of Darwin and Wallace, its work in encouraging business owners to consider the impact of their choices in sourcing, society and environment gave me a framework that helped me to put those values at the heart of our business.”

Andrew Stephen, SRA’s chief executive, added, “There are a multitude of ingredients that go together to make food good, in every sense. Darwin & Wallace’s own recipe has deservedly earned its three stars in its Food Made Good Sustainability rating.

‘Whether taking care to ensure it serves only sustainable seafood, supporting local charities or recycling almost everything it can, Darwin & Wallace is proof positive of a bar group successfully taking care of business for today and the future.”
