Edinburgh-based Swedish cafe-bakery chain to open first London site

Edinburgh’s four-strong Swedish artisan cafe-bakery chain, Söderberg is open its first London-based site at 36 Berwick Street, Soho, through Shaftsbury.

Set to open this month, the two-floor cafe will offer visitors authentically Swedish, high quality food including open-style sandwiches, smörrebröd, bread and pastries, and will incorporate Scandinavian design with contemporary furnishings from Norrgavel and other Scandinavian designers.

The Soho-based establishment will use premium ingredients including Valrhona chocolate, favoured by top pastry chefs, as well as championing sustainability and using responsibly-sourced ingredients both in-store as well as at supplier level.

This includes Soderberg’s flour, supplied by Shipton Mill, which utilises Soil Association- approved organic farming practices and whose solar generation scheme generates 20% of the energy they consume. Soderberg also sources its salmon from Belhaven Smokery, who are SALSA-approved (Safe and Local Supplier Approval) and whose fish is Marine Conservation Society-approved.

In the cafe, Soderberg reusable keep-cups will be heavily promoted and incentivised, with the purchase of a keep- cup entitling customers to a £1 coffee and a free cinnamon bun, and its take-away cups are not only recyclable but also compostable.
